How and Why to Cook a Steak with a Blowtorch

Turns out that delicious steak can be done with just a blowtorch, due to something called the Maillard reaction, the chemical reaction between amino acids and reducing sugars that gives browned food its fantastic flavor.  This reaction is also responsible for the great crunch and taste of bread.
